Slow Cooker Lasagna

A perfect solution for a busy holiday week: No need to cook the noodles first or stay home while it bakes. Just let it sit a few minutes before serving so it can firm up a bit.

1 lb. uncooked lean ground beef (with 7% fat)
1 small onion, chopped
1 medium garlic clove, minced
28 oz canned crushed tomatoes
15 oz canned tomato sauce
1 tsp table salt
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes, or to taste
1 cup part-skim ricotta cheese
1 1/2 cups part-skim mozzarella, shredded, divided
6 dry lasagna noodles, no cook
1/2 cup shreeded Parmesan Cheese, such as Romano or Parmigiano Reggiano

Heat a large nonstick skillet over medium-high heat. Add beef, onion, and garlic; cook, stirring frequently, breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes.

Stir in crushed tomatoes, tomato sauce, salt, oregano, basil, and red pepper flakes; simmer 5 minutes to allow flavors to blend. Meanwhile in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella.

Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer an finish with remaining 1/3 of beef mixture.

Cover slow cooker and cook on low setting for 4 to 6 hours. Remove cover; turn off heat and season to taste, if desired.

In a small bowl, combine remaining 1/2 cup of mozzarella and Paremsan; sprinkle over beef mixture. cover and set aside until the cheese melts and the lasagna firms up, about 10 minutes.

Good Idea: To boost this with Filling Foods, add a can of zucchini in tomato sauce to the mixture. You can also add 2 cups of sliced shiitake mushrooms.

Chicken Taco (in a Crockpot)

Chicken Taco (in a Crockpot)

4 boneless skinless chicken breasts
1 can of black beans
1 cup whole kernal corn
1-1/2 cups chopped mushrooms
1 cup chopped onion
1 pkg of Taco seasoning
1 cup salsa

Throw it all in a crockpot and cook on low for 8-10 hours. Serve straight out the pot, or with tortillas, or taco shells, or on a bed of lettuce, or on a potato! The options are endless!

Dee’s Southwest Chicken

Dee’s Southwest Chicken
6 servings of 1 thigh….5 Pts. For 1 breast ….6.5 Pts

1 package frozen boneless, skinless chicken breasts (I think it was a 2lb bag) – 6 thighs
1 can corn, drained (or 12 oz frozen works too)
1 can black beans, drained/rinsed
1 14 oz tub of Mango Peach salsa
1 8oz brick cream cheese

In a large slow cooker, put the chicken in the bottom and top with salsa, corn and beans. Don’t bother stirring it, it’ll take care of itself. Let it cook for 10 hours on low, or 5-6 hours on High. About 30 minutes before serving place the brick of cream cheese on top and let it melt into the mixture. If there’s a lot of juice, dip most of it off*. 5 Hour Chicken Stew

5 Hour Chicken Stew (low fat)

3 cans chicken broth 3 cans stewed tomatoes
1 cup white wine
1 tablespoon sugar
3/4 teaspoon pepper
1 tablespoon (or less) salt
7 large potatoes (peeled and diced bite size)
5 carrots, peeled (peeled and diced bite size)
3 onions, peeled (peeled and diced bite size)
garlic
2 stalks celery (peeled and diced bite size)
3 raw chicken breast halves without skin, (diced bite size)

Mix all together in crock pot or in large casserole for the oven. Bake 5 hours in oven or until tender in crock pot. Add water, additional chicken broth, or tomato juice/ketchup to increse amount of liquid or to adjust flavor. Tastes good served with cornbread

White Chicken Chili with Hominy

1 ¼ lbs. Boneless, skinless chicken thighs
2 cans great northern beans, rinsed and drained
1 can white hominy, drained
1 envelope taco seasoning mix
1 (4.5 oz) can chopped green chiles
1 can cream of mushroom soup (I used 98% fat-free.)
Sour cream, if desired
Chopped green onions, if desired

Place chicken in a slow cooker. Top with remaining ingredients except sour cream and onions. Cover and cook on low for 8-10 hours. Before serving, stir gently to break up chicken pieces. Serve topped with sour cream and onions.

One Dish Chicken Dinner

4 boneless skinless chicken breasts
1 can 98% fat free crm of celery soup
1 pkg stove top stuffing mix
1/3 c fat free milk
1 2/3 c of water

Place chicken in bottom of crock pot. Mix soup and milk pour over chicken. Mix stuffing and water and spoon over chicken and soup. Cover and cook on low for 6-8 hours…very good.
