Blackberry-Peach Smoothie

Having trouble getting in your fruit servings? This awesome combination of sweet peaches and tart blackberries goes down real smooth.

2 points per serving | Prep: 5 min. | Serves 1

3/4 cup ice cubes
2 medium peaches, peeled, pitted, and quartered
1/4 cup blackberries
1/2 cup fat-free milk

Place ice in a blender container; add peaches, blackberries and milk.
Blend on high until smooth and ice is completely crushed, about 3-4 minutes. Yields 1 serving.

Good Idea: Peel the peaches with a sturdy vegetable peeler. Or dip the peaches in boiling water for 1 minute and then remove the skins with a paring knife.

Minted Hot Cocoa

If you don’t like the taste of plain milk, here’s an easy and tasty substitute.
Makes 1 serving

Ingredients:
2 tbsp cocoa powder
1 hard peppermint candy, crushed
1 cup hot water
1 cup low-fat (1%) milk
1 tsp vanilla extract
3 pkgs sugar substitute

Combine the cocoa, candy, and hot water in a large (20 oz) mug or microwave-safe container. Stir well. Microwave on High for 1 minute. Stir again. Add the milk and vanilla and continue to microwave for 1 1/2 to 2 minutes or until hot. Stir in the sugar substitute. Serve immediately.
Tip: For an extra Point, top with 1/4 cup whipped cream

Mango-Ginger Smoothie

This smoothie delivers half of your vitamin A for the day. Thanks to the mango and the yogurt, it has 16 times the vitamin A and 5 times the calcium of a cup of orange juice.
Makes 2 servings

Ingredients:
1 ripe mango, peeled, seeded and chopped
3/4 cup crushed ice
1/2 cup low fat vanilla, pineapple or pina colada yogurt
1/2 cup cold water
3/4 tsp. minced crystallized ginger or peeled fresh ginger
Combine ingredients in a blender and process on high speed until smooth. Serve immediately.

For a plain mango smoothie, don’t use the ginger.

Strawberry Smoothie

Ingredients:
1 cup fresh strawberries, rinsed and hulled,
or frozen strawberries, partially thawed
3/4 cup buttermilk
1/2 cup frozen cranberry-juice concentrate
2 ice cubes, crushed
1 tsp sugar, or to taste
In a blender, combine all ingredients; blend until smooth and frothy.
Serve immediately.

SERVING SIZE: 1 cup
