3-2-1 Cake

Combine one box of angel food cake mix together with one box of any other flavor cake mix, in a large Zip Lock bag.
Choose whatever flavor you like: Lemon, Chocolate, Spice, etc.
Ensure both mixes are combined completely in the bag.

Spoon out 3 Tablespoons cake mix into a large glass mug or glass bowl
Add 2 Tablespoons of water and mix with a spoon or fork
Cook in microwave for 1 minute

3-2-1 Cake is ready!!! Add fruit or Cool Whip, and enjoy.

Apple Pie Crumble

Warm, juicy apples are dusted with cinnamon and nutmeg, packed into a light, homemade pie crust, and topped with an oat-based crumb.  Irresistible.

Chocolate Caramel Popcorn Lollipop

  • 1 bag 100 calorie Jolly Time Healthy Pop 97% Fat Free Butter Flavor Microwave Pop Corn, popped (about 5 cups)
  • 5 Weight Watchers Caramel Medallions
  • 1 teaspoon fat free or low fat milk
  • 5 marshmallows
  • Nonstick cooking spray
  • 6 popsicle sticks, optional
  1. Preheat oven to 350°
  2. Pop popcorn according to package directions.  Open bag carefully and pour into large bowl; discard unpopped kernels.
  3. Remove caramel medallions from packaging and place in a small microwaveable bowl.  Microwave for 15 to 20 seconds or until candies are softened; they will not appear melted so you will need to stir.  Medallions burn easily so do not overcook.

Dark and Creamy Fudge

Enjoy this lusciously smooth treat for Halloween or any holiday – the salt plays up the rich flavor.

2 PointsPlus per serving |Prep: 15 min | Cook: 5 min | Serves: 32

  • 10 oz. bittersweet or semisweet chocolate, finely chopped
  • 1 (14 oz) can fat-free or reduced fat sweetened condensed milk
  • 1/2 tsp vanilla extract
  • Pinch + scant 1/2 tsp coarse sea salt
  1. Line 8-inch square baking plan with plastic wrap, leaving 2-inch overhang.  Smooth out any wrinkles.
  2. Combine chocolate, condensed milk, vanilla, and pinch salt in large heavy saucepan.  Cook, stirring occasionally, over medium-low heat, until chocolate melts and mixture is smooth, about 5 minutes.  Transfer fudge to preared pan; spread evenly with rubber spatula.  Let cool.  Cover with plastic wrap and refrigerate until firm, at least 2 hours.
  3. Uncover fudge; remove from pan by lifting edges of plastic wrap.  Invert fudge onto cutting board; discard plastic wrap.  Cut fudge into 8 strips, then cute each strip crosswise into 8 pieces.  To serve, bring the fudge to room temperature.  Sprinkle evenly with remaining 1/2 tsp. salt.  Yields 2 pieces per serving.

Good Idea:  Fudge is an ideal do-ahead treat.  Prepare the recipe as directed, but after cutting the fudge, layer pieces between sheets of wax paper in an airtight container.  Cover and refrigerate up to two weeks.
