Low fat bran muffins

Ingredients
3/4 cup Egg Beaters Egg Beaters
3/4 cup Musselman's Apple Sauce
2 cup buttermilk
2 tsp ground cinnamon
1/4 tsp table salt
1 tsp vanilla extract
1 cup wheat germ
1/2 cup raisins
1 Tbsp baking powder
1 1/2 Tbsp baking soda
1/4 cup molasses
2 Tbsp maple syrup
1 cup uncooked wheat bran
2 1/2 cup all-purpose flour
1 cup packed brown sugar
Instructions
I used the lowfat buttermilk. They are also sweet enough that you could use only half of the sugar.
Mix ingredients together and refrigerate for an hour or overnight. Bake at 400 degrees for 10 min. for small muffins and 20 min. for large muffins. The batter will keep in the refrigerator for up to 10 days. _________________ Skip Clarke, Site Admin
